banana cookies (vegan, gluten-free)

These taste just like banana bread!


Ingredients:

- 2 ripe bananas

- 2 flax eggs

- 1/2 cup nut butter (I used almond)

- 2 tablespoons avocado oil

- 1 teaspoon vanilla extract

- 1/2 cup almond meal

- 1/2 cup oat flour

- 1.5 cups gluten-free oats

- 1/2 teaspoon baking soda

- 1/2 teaspoon baking powder

- 1/2 cup chocolate chips

- Any mix-ins: I used walnuts


Instructions:

1. Preheat the oven to 350°F.

2. Prepare the flax eggs and let sit for 10 minutes.

3. In the same bowl, mash in the bananas. Add nut butter, baking soda/powder, oil, and vanilla. Stir until well combined.

4. Stir in almond meal, oat flour, and oats. Then add your toppings.

5. Scoop onto a lined baking sheet and bake for 15-18 minutes! Store in an airtight container.
