banana bread muffins (vegan, gluten-free)

Ingredients:

- 2 or 3 overripe bananas

- 2 tablespoons vegan milk (I used macadamia milk)

- 2 teaspoons vanilla extract

- 2 teaspoons apple cider vinegar

- 3 tablespoons avocado oil

- 1 cup oat flour

- 1/2 teaspoon salt

- 1/2 teaspoon baking powder

- 1/2 teaspoon baking soda


Instructions:

1. Preheat the oven to 350°.

2. Whisk the first 5 ingredients together and set aside for 10 minutes. Spray a muffin tin.

3. In a separate bowl, mix together the remaining ingredients.

4. Mix together the two mixes and divide among the muffin tin.

5. Bake for 20 minutes! Store in an airtight container.
