lemon loaf (vegan, gluten-free)

I absolutely love lemon anything, and this loaf did not disappoint!


Ingredients:

- 2 cups oat flour

- 1½ teaspoons baking powder

- 1/4 teaspoon baking soda

- 3/4 teaspoon salt

- ½ cup vegan vanilla yogurt

- ¼ cup avocado oil

- ¼ cup lemon juice

- zest of 2 lemons

- 1 teaspoon vanilla


Instructions:

  1. Preheat the oven to 350ºF and line a loaf pan.

  2. Whisk the liquid ingredients in one bowl.

  3. Combine all the dry ingredients in another bowl.

  4. Combine the two mixtures until a batter forms.

  5. Pour into the loaf pan and bake for 50-55 minutes.
