lemon blueberry bread (vegan, gluten-free)

This bread is so light, fluffy, and perfect for a breakfast or snack!


Ingredients:

- 1/2 cup vegan vanilla yogurt

- 3 tablespoons maple syrup

- 1 teaspoon vanilla extract

- 1/3 cup lemon juice

- 1 tablespoon lemon zest

- 3/4 cup oat flour

- 1/2 cup almond flour

- 2 tablespoons potato starch (could try subbing arrowroot)

- 1 teaspoon baking soda

- 1/2 cup blueberries


Instructions:

  1. Preheat the oven to 350ºF and line a loaf pan.

  2. Mix together the yogurt, syrup, vanilla, lemon juice, and lemon zest.

  3. Mix in the oat flour, almond flour, potato starch, and baking soda.

  4. Fold in the blueberries.

  5. Pour into the loaf pan and bake for 35-40 minutes!
