chocolate banana bread (vegan, gluten-free)

I don't think I'll ever tire of banana bread! The customizations and combinations are endless.


Ingredients:

- 2 bananas

- 2 flax eggs (2 tbsp with 5 tbsp water, let sit for 10 minutes)

- 1 cup macadamia milk (can use any type of milk)

- 3 tablespoons monk fruit sweetener (can sub sugar)

- 2 cups oat flour

- 1/4 cup cacao powder

- 1 teaspoon baking soda

- lots of dark chocolate chips


Instructions:

  1. Preheat the oven to 350ºF and line a loaf pan.

  2. Mix all of the liquid ingredients with the mashed banana together.

  3. Mix in the rest of the ingredients and fold in the chocolate chips.

  4. Pour into the pan and bake for 25-35 minutes! Store in the fridge.
