banana bread (vegan, gluten-free)

A super fluffy and moist banana bread! Perfect for any occasion.


Ingredients:

- 2 cups blanched almond flour

- 3 ripe bananas

- 2 flax eggs (2 tbsp flax meal mixed with 5 tbsp water, let sit for 10 minutes)

- 1 tablespoon baking powder

- 1/2 teaspoon sea salt

- 1/2 teaspoon vanilla


Instructions:

  1. Preheat the oven to 350ºF and line a loaf pan.

  2. Mash the bananas.

  3. Mix in the rest of the ingredients.

  4. Pour into the loaf pan and add any toppings; I like crushed walnuts!

  5. Bake for 55-60 minutes.
