
Chickpeas add a boost of protein to this recipe! Don't worry, the chickpea taste is not noticeable!
Ingredients:
- 1 can chickpeas, drained (15 ounces)
- 2 tablespoons avocado oil
- 1.5 teaspoons baking powder
- 1/3 cup plant milk (I used macadamia, but almond/oat/etc work just as well!)
- 3/4 cup gluten-free oats
- 2 tablespoons date/maple syrup
- Chocolate chips to top (I used Enjoy Life)
Instructions:
1. Preheat the oven to 350°F.
2. Blend the chickpeas in a food processor until smooth.
3. Add the rest of your ingredients and blend until smooth.
4. Pour into a lined loaf pan, top with chocolate chips, and bake for 35-45 minutes. Note: wait until it is completely cooled until you cut, otherwise it will be sort of liquidy! Store in an airtight container.
