sticky toffee bars (vegan, gluten-free)

These amazing bars have a date caramel center surrounded by layers of oat shortbread :)


Crumble ingredients:

- 1/4 cup oat flour (I made my own by putting oats in a food processor)

- 1¼ cups oats

- 1/2 cup almond flour

- 1/4 cup shredded coconut

- 3 tablespoons runny almond butter

- 2 tablespoons chia seeds

- 1/3 cup maple syrup

- 1 teaspoon cinnamon

Toffee ingredients:

- 20 dates, soaked in water for 15 minutes

- 1½ tablespoons coconut oil

- 2 tablespoons maple syrup


Instructions:

1. Preheat the oven to 350°F and line a loaf or 8x8 pan.

2. Mix all of the crumble ingredients together and press half of the mixture into the pan.

3. In a food processor, combine all of the toffee ingredients until smooth.

4. Pour the toffee on top of the crumble.

5. Pour the other half of the crumble on top of the toffee.

6. Bake for 15 minutes!
