chocolate coconut cookies (vegan, gluten-free)

These cookies are great if you like chocolate and coconut! The bananas also naturally sweeten them :)


Ingredients:

- 2 bananas

- 1/4 cup maple syrup

- 1 teaspoon vanilla extract

- 2 tablespoons almond butter

- 1/2 cup oat flour

- 1/2 cup gluten-free all purpose flour

- 1/3 cup dark chocolate chips

- 1/3 cup coconut flakes (or shredded)


Instructions:

  1. Preheat the oven to 350ºF and line a cookie sheet.

  2. In a bowl, combine the mashed bananas, maple syrup, vanilla, and almond butter. Stir until smooth.

  3. Add in the flours and stir until a dough forms.

  4. Fold in the chocolate and coconut.

  5. Scoop into balls and lightly flatten.

  6. Bake for around 15 minutes.
