chickpea flour pancakes (vegan, gluten-free)

These pancakes are a great source of protein!


Ingredients:

- 2 cups chickpea flour

- 2 teaspoons baking powder

- 1.5 cups almond milk

- 5 tablespoons maple/date syrup

- 2 teaspoons apple cider vinegar


Instructions:

  1. Whisk together the flour and baking powder.

  2. Stir in the milk, syrup, and ACV.

  3. Grease a skillet and use about 1/4 cup of batter per pancake. Let cook for 2-3 minutes per side and enjoy! Store leftovers in the fridge.
