chinese almond cookies (vegan, gluten-free)

Happy Chinese New Year! These cookies are delicious.


Ingredients:

- 2 cups almond meal (not almond flour)

- 1 scoop vanilla protein powder (I used Tone It Up)

- 1/4 cup coconut flour

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- 1/2 cup melted coconut oil

- 1/2 cup maple syrup

- Almonds to top!


Instructions:

1. Preheat the oven to 320°F.

2. Mix all your dry ingredients together.

3. Mix in the wet ingredients.

4. Roll 16 balls and place them on a lined baking tray.

5. Slightly press down the cookie and place an almond on top.

6. Bake for 12 minutes. The cookies will be soft, but will harden as they cool! Store in an airtight container.
