chocolate chickpea muffins (vegan, gluten-free)

It may be surprising that these contain chickpeas, but you can't notice them! it just tastes like a fudgy chocolate muffin.


Ingredients:

- 1 ripe banana

- 1 can chickpeas + liquid for aquafaba

- 2 scoops chocolate protein powder (I used Tone It Up)

- 1/2 cup gluten-free oats

- 1/4 cup flaxseed meal

- 2 tablespoons raw cacao powder

- 1/2 teaspoon cinnamon

- 3/4 teaspoon baking powder


Instructions:

  1. Preheat the oven to 350ºF and line/spray a muffin tin.

  2. Create aquafaba in a food processor.

  3. Add in the chickpeas and banana, blend until smooth.

  4. Add in the rest of the ingredients.

  5. Divide among the muffin tin and top with nut butter and chocolate chips.

  6. Bake for 22 minutes.
