chocolate chip pumpkin bars (vegan, gluten-free)

Pumpkin is for all year round! Especially with chocolate :)


Ingredients:

- 1/2 cup pumpkin purée

- 3 tablespoons avocado oil (sub coconut)

- 1/2 cup water

- 1 tablespoon apple cider vinegar

- 2 teaspoons vanilla

- 1½ cups oat flour (sub all-purpose)

- 1/4 cup monk fruit sweetener (sub sugar)

- 1/2 cup dark chocolate chips

- 3/4 teaspoon salt

- 3/4 teaspoon baking powder

- 3/4 teaspoon baking soda


1. Preheat the oven to 350°F and line an 8x8 or loaf pan.

2. Mix all of the liquid ingredients together.

3. Mix in the rest of the ingredients.

4. Pour into the on and bake for around 15 minutes!
