chocolate loaf (vegan, gluten-free)

This loaf is super high in protein! There's an unexpected ingredient in these: black beans! Luckily you can't taste them :)


Ingredients:

- 1 can black beans (15 ounces)

- 1/3 cup almond milk (can use any milk)

- 1/3 cup maple syrup

- 1/4 cup monkfruit sweetener (can also use coconut sugar/regular sugar)

- 1/3 cup cacao powder

- 1/4 cup gluten-free oats

- 2 tablespoons avocado oil

- 2 teaspoons baking powder


Instructions:

  1. Preheat the oven to 350ºF and line a loaf pan.

  2. Blend the beans in a food processor until smooth.

  3. Blend in the rest of the ingredients until smooth.

  4. Pour into your pan and bake for 40 minutes. Wait at least an hour to cut the loaf! You don't want a gooey mess! Store in an airtight container.
