coconut chocolate chip muffins (vegan, gluten-free)

These are definitely some of the best muffins that I've ever made!


Ingredients:

- 1 banana

- 1/2 cup plant milk

- 1/4 cup maple syrup

- 1 teaspoon vanilla extract

- 3 tablespoons nut butter (I used almond)

- 3/4 cup oat flour

- 1.5 teaspoons baking powder

- 1/4 cup coconut flour

- 1/4 cup shredded coconut (and more for the tops)

- 1/4 cup dark chocolate chips


Instructions:

  1. Preheat the oven to 350ºF and spray a muffin tin.

  2. Mash the banana in a large bowl and stir in the milk, syrup, vanilla, and nut butter.

  3. Stir in the flour, baking powder, coconut flour, and coconut. Fold in the chocolate chips.

  4. Divide the batter among the muffin tin and top with more shredded coconut.

  5. Bake for 25 minutes and store in an airtight container.
