coconut truffles (vegan, gluten-free)

These truffles are absolutely amazing and don't require baking!


Ingredients:

- 1.5 cups shredded coconut

- 1/2 cup almond flour

- 1/3 cup maple/date syrup

- 2 tablespoons almond milk

- Vegan chocolate to melt


Instructions:

1. Blend all the ingredients except the chocolate in a food processor.

2. Form balls and freeze for at least 30 minutes.

3. Take the truffles out of the freezer and dip in melted chocolate. Store in the fridge.
