coffee cake muffins (vegan, gluten-free)

Coffee cake muffins without actual coffee! :)


Ingredients:

- 1/2 cup milk (I used macadamia milk)

- 2 teaspoons apple cider vinegar

- 1 teaspoon vanilla

- 1.5 tablespoons avocado oil

- 1 cup oat flour

- 1/4 cup monk fruit sweetener (can sub for sugar)

- 2 teaspoons baking powder

- 1/4 teaspoon salt

- optional: cinnamon

Topping ingredients:

- 2 tablespoons almond/oat flour

- 3 tablespoons monk fruit sweetener

- 1.5 tablespoons oats

- 2 tablespoons melted coconut oil


Instructions:

  1. Preheat the oven to 350ºF and line a muffin tin.

  2. Whisk the first four ingredients together and set aside for 10 minutes.

  3. Make the topping part and set aside.

  4. To the liquid mixture, add the rest of the muffin ingredients.

  5. Divide among the muffin tin and divide the topping on top.

  6. Bake for 20 minutes!
