
This coffee cake doesn't actually require any coffee! I love it :)
Cake Ingredients
- 1 cup almond flour
- 1¼ cup oat flour
- 3 flax eggs (3 tbsp flaxseed, 7 tbsp water, let sit 10 mins)
- 1/4 cup maple syrup
- 1/2 cup applesauce
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Crumble Ingredients
- 1/4 cup melted coconut oil
- 1/4 cup almond flour
- 1/4 cup monk fruit (sub sugar)
- 3 tablespoons rolled oats
1. Preheat the oven to 350°F and line a loaf pan.
2. Mix the flax eggs, maple syrup, and applesauce.
3. Add in the dry ingredients and mix well.
4. Pour into the loaf pan.
5. Make the crumble and sprinkle evenly on top of the batter. I also sprinkled some cinnamon on top.
6. Bake for around 30 minutes! May need to adjust time based on the loaf pan size.
