iced gingerbread cookies (vegan, gluten-free)

These are perfect for the holidays, or any time really!


Cookie Ingredients:

- 1.75 cups almond flour

- 1/4 cup arrowroot starch

- 1/2 teaspoon baking soda

- 1/4 teaspoon sea salt

- 1 teaspoon cinnamon

- 1.5 teaspoons ground ginger

- 1 teaspoon vanilla extract

- 1/4 cup maple syrup

- 1/4 cup molasses

- 2 tablespoons coconut oil

Icing Ingredients:

- 3/4 cup powdered monkfruit (or powdered sugar)

- 2 tablespoons almond milk


Instructions:

  1. Preheat the oven to 350ºF.

  2. Whisk together the almond flour, arrowroot, baking soda, salt, cinnamon, and ginger.

  3. Add in the vanilla, syrup, molasses, and oil. If your dough is too dry, add more syrup. if it is too wet, add more almond flour.

  4. You can either bake these like standard circular cookies or roll out and use cookie cutters!

  5. Bake for 10-14 minutes.

  6. Mix your icing together and once the cookies are fully cooled, ice your cookies. Store in an airtight container.
