lemon cookies (vegan, gluten-free)

Happy spring! My lemon tree has started to produce so many lemons so here are some easy cookies to make!


Ingredients:

- 2 cups almond flour

- 1/4 cup applesauce

- 1/4 cup maple syrup

- Juice and zest of one lemon

- 2 teaspoons vanilla

- 1/2 teaspoon baking powder

- I used melted coconut butter for the icing


Instructions:

1. Preheat the oven to 350° and line a cookie sheet.

2. Mix all ingredients until a dough forms, adding more flour or a bit of milk if the dough needs to be more dough-y.

3. Bake for around 12 minutes!
