matcha bread (vegan, gluten-free)

I love making this matcha bread! It has the perfect amount of matcha flavor.


Ingredients:

- 1 flax egg (1 tablespoon flaxseed meal with 2.5 tablespoons water, let sit for 10 minutes)

- 1/2 cup vegan vanilla yogurt

- 1/3 cup applesauce

- 1/4 cup almond milk

- 1/4 cup maple syrup

- 2 cups gluten-free oat flour

- 1 teaspoon baking powder

- 2 tablespoons matcha powder


Instructions:

  1. Preheat the oven to 350ºF.

  2. After making your flax egg, mix in the yogurt, applesauce, milk, and syrup.

  3. Add in the flour, baking powder, and matcha powder.

  4. Pour into a muffin tin and bake for 25-30 minutes. Store in an airtight container.
