
I love making this matcha bread! It has the perfect amount of matcha flavor.
Ingredients:
- 1 flax egg (1 tablespoon flaxseed meal with 2.5 tablespoons water, let sit for 10 minutes)
- 1/2 cup vegan vanilla yogurt
- 1/3 cup applesauce
- 1/4 cup almond milk
- 1/4 cup maple syrup
- 2 cups gluten-free oat flour
- 1 teaspoon baking powder
- 2 tablespoons matcha powder
Instructions:
Preheat the oven to 350ºF.
After making your flax egg, mix in the yogurt, applesauce, milk, and syrup.
Add in the flour, baking powder, and matcha powder.
Pour into a muffin tin and bake for 25-30 minutes. Store in an airtight container.
