matcha cookies (vegan, gluten-free)

I just love the texture of these!! I hope you try them.


Ingredients:

- 2 cups blanched almond flour

- 2.5 teaspoons matcha powder (I like using Sencha Naturals)

- 1 tablespoon monkfruit sweetener (you can use sugar/coconut sugar instead)

- 1/2 teaspoon baking soda

- 3 tablespoons avocado oil

- 1/4 cup maple syrup

- 1 teaspoon apple cider vinegar

- 1/3 cup dark chocolate chips


Instructions:

  1. Preheat the oven to 350ºF and line a baking sheet.

  2. Combine the dry ingredients (minus the chocolate) in a bowl.

  3. Add in the liquid ingredients and stir until a dough forms.

  4. Fold in the chocolate chips.

  5. Scoop onto the baking sheet and slightly flatten.

  6. Bake for 20 minutes.
