matcha muffins (vegan, gluten-free)

These matcha muffins use oat flour and are one of my favorite recipes to make!


Ingredients:

- 1 flax egg

- 1/2 cup vegan vanilla yogurt

- 1/3 cup applesauce

- 1/4 cup almond milk (or any milk)

- 1/4 cup maple syrup

- 2 cups gluten-free oat flour (Mine is homemade by blending oats in a food processor)

- 1 teaspoon baking powder

- 2 tablespoons matcha powder


Instructions:

1. Preheat the oven to 350°F.

2. After making your flax egg, mix in the yogurt, applesauce, milk, and syrup.

3. Add in the flour, baking powder, and matcha powder.

4. Pour into a lined/greased muffin tin and bake for 25-30 minutes! Store in an airtight container.
