pineapple muffins (vegan, gluten-free)

hi friends! these muffins are so good, I highly recommend! the recipe is based off of @chocolatecoveredkatie on Instagram.


ingredients:

- 2 cups crushed pinaeppl

- 1/4 cup vegan milk (I used almond)

- 2 tablespoons apple cider vinegar

- 3 teaspoons vanilla extract

- 6 tablespoons avocado oil

- 2 cups gluten-free all-purpose flour (I used Bob's Red Mill 1:1 flour)

- 1 teaspoon baking powder

- 1 teaspoon baking soda

- 1 teaspoon salt


instructions:

  1. preheat the oven to 350 degrees F.

  2. mix the pineapple, milk, vinegar, vanilla, and oil in a bowl.

  3. stir in the rest of the ingredients.

  4. bake for 20 minutes and store in an airtight container.
