pumpkin banana bread (vegan, gluten-free)

Not your traditional pumpkin banana bread but still very tasty! I adapted this recipe from @bitesbyallieb on Instagram.


Ingredients:

- 1 banana

- 1/2 cup pumpkin purée

- 1 can chickpeas & liquid for aquafaba

- 2 scoops of vanilla protein powder (I used Tone It Up)

- 1 cup gluten-free oats

- 1/4 cup flaxseed meal

- 1 teaspoon vanilla

- 1/2 teaspoon cinnamon

- 3/4 teaspoon baking powder


Instructions:

1. Preheat the oven to 350°.

2. Create aquafaba in a food processor by blending for 45 seconds.

3. Add in the banana, pumpkin, chickpeas, and blend until smooth.

4. Blend in the rest of your ingredients.

5. Pour into a lined loaf pan and bake for 30 minutes!
