valentine's day muffins (vegan, gluten-free)

Happy Valentine's Day! I've never tried to make a mini-batch of muffins before, and so I used a recipe from @minibatchelif on Instagram! They turned out wonderfully. These make two muffins!


Ingredients:

- 2 tablespoons applesauce

- 1 tablespoon almond milk (can use any milk)

- 2 teaspoons monk fruit sweetener (or sugar)

- 1 teaspoon avocado oil

- 1/4 teaspoon vanilla extract

- 1/4 cup gluten-free flour

- 1/4 teaspoon baking powder

- 2 teaspoons sprinkles


Instructions:

1. Preheat the oven to 350°F.

2. Mix all your dry ingredients together.

3. Mix in the wet ingredients.

4. Divide batter into two muffin tins and bake for 20-25 minutes!
